Long-term consumption of high-fat foods can negatively affect retinal blood vessels and potentially increase risks to eye health.
This conclusion was reached by scientists who published a study in the journal Frontiers in Physiology.
In the experiment, mice were fed a high-fat diet for 18 weeks, after which researchers examined the response of their retinal blood vessels.
It turned out that retinal arterioles in animals on this diet dilated less effectively and showed a weaker response to pressure changes compared to mice fed a standard diet. Signs of oxidative stress and inflammatory changes were also observed in retinal tissues.
The authors believe that a high-fat diet may impair retinal microvessel function even before overt structural damage occurs.
